I would like for our students to take a survey quiz in Canvas as a personality ice breaker, and have those fields auto populate into a table for everyone to see the results. I am more familiar with how Form fields work in Wordpress, is there something similar I could work with in Canvas?

There is no functionality to do this in Canvas. You could accomplish this using an embedded GoogleForm (to capture the data), then embed a GoogleSheet to display the collected data. Alternately, you could create a new Idea Conversation to ask that this feature be added to Canvas............
