A Feature Idea already exists for this kind of functionality, and you can find it at Delete submissions by students - Canvas Community. If you feel that this Feature Idea aligns with something you would like to see implemented in Canvas, you might want to give it a star rating and also post a comment to that thread letting Instructure know why this would be valuable to you within Canvas.
