What is the easiest way to access the assignments that I have shared to "only me" in Canvas? Is there a filter I am missing that allows me to quickly and easily go to these assignments?

When you save content to the Canvas Commons, and choose to Save "only me", it is stored under your name - the name you are registered with in Canvas. So when you go back into Commons, you can search/filter by your name, then you can narrow your search by the type of content you are looking for - courses, pages, assignments etc.
