[Analytics] Include Observer in Admin Analytics Dashboard

Problem statement:

Can you please add tracking of roles other than student eg observer. We would like to track parent engagement across our institution and that is tracking the observer role.

Proposed solution:

Track all roles in Canvas and have this as a filterable option when creating dashboard view.
