[Calendar] Missing Submissions after Available Until Date

In higher education, we have the need to give a 0 to all students who did not submit their assignment after the cut-off date (available until date in Canvas). Right now, the missing submissions feature is only able to do this once the assignment due date has passed. It would help a lot if we can choose to change it to being after the available until date.

This is a good idea @dominiquel .  I'd like to see other ways to make this more flexible. I used to allow students to turn in an assignment up to 3 days after the due date, and seeing a 0 there would be discouraging.   There could be Checkboxes, and for X days grace period a place to enter the number of days:

When to apply missing assignment score:

• Due Date (default)
• Available until date
• X days after the due date
