[New Quizzes] Rich Content Editor (RCE) to Categorization Questions

For instructors in disciplines such as geology, math, music, and other sciences, the inability to format text or include visual elements in categorization questions hinders their ability to assess students effectively or authentically. Many concepts in these fields require students to categorize images, symbols, equations, or musical notations rather than just plain text. Example Use Case: In geology, an instructor might want students to categorize different rock samples based on their type (metamorphic, igneous, sedimentary). Without the RCE, students must rely solely on text descriptions rather than analyzing images of actual rock samples (with text accompanying descriptions for visually impaired students). This reduces the authenticity of the assessment, as geology relies heavily on visual recognition.
