When you add an assignee to an assignment in Canvas teacher app, tags are not an option.

As differentiation tags are currently in a feature preview state, you'll probably need to use Canvas for the web to manage the tags and assign-to's with the tags. I don't work for Instructure, but I've been an admin for many years now, so I know things are usually released first on the web, then the app later (usually after features are no longer in the preview state). Some things just never make it to the apps, but I suspect this will eventually be there in the future (no guarantee on that or a timeline though). You should be able to use a web browser on your device to accomplish this though at least, even though I know that might make the workflow a bit clunky.
