Accreditation and exporting student work from Canvas

My office is supporting 2 different re-accreditations for our graduate programs right now, and we are required to include a range of historical examples of student work, including quizzes and designs. Much of this work exists exclusively in Canvas.

Since there is no way to export student work from Canvas to PDF, Excel, or Word documents, what's the next best (easiest and fastest) process in Canvas for extracting student work that needs to be shared with an accreditation board?

Hello @MallarieZimmer  --  we just had a visit from an accreditation organization and our approach to the requirement was to create a generic admin account. We assigned a custom account role to the account that enables it to read but not edit anything in the target subaccount(s). This includes full access to grades and student submissions. We then identified sets of courses that they wished to review and made sure the courses were not concluded. We then created an 'Orgname Accreditation 2024' course in Canvas and filled it up with all the required details about the programs and courses. We also provided direct links on those pages to the courses that might be chosen to be reviewed. The only tricky part was preplanning to secure phone numbers for our required MFA/2FA.

Several years ago I created a means to batch download student file submissions however this approach requires Canvas Data to implement. I mention this only to say that with the right tools it was doable.
