When I uploaded my modified syllabus to my course, it added text to the syllabus. In this case since the syllabus was a template it added an email that was in the template.

The Canvas syllabus area will not modify your content at all, unless your school/institution has added some sort of extra code/modifications onto the syllabus page through CSS/Javascript. It's also possible that you're using a 3rd party syllabus tool integrated with Canvas that could have the ability to insert predefined fields like campus policies, room assignments, contact info, etc.
