Admin report to see how many assignments a teacher assigned in a given week

I want to run an admin report for my school administrators that will tally up the number of assignments posted per teacher per course each week.  Currently, none of the default options are available to me, and the only answer I can find is to go to each course's New Analytics each week which is not feasible for a school of 120 teachers and most of those teachers teach 2-3 different preps.  Is there a report I can run, or one that I can configure to get the answers I need?

To my knowledge, there isn't an account level report that provides this information already nor existing reports that can be combined/filtered to provide this information from the account level.  This will likely require building a custom report using Canvas Data and/or the Canvas APIs.  Canvas Data would be more efficient for this type of report.  The Canvas APIs would take longer to get all the necessary data for this report.
