Just a suggestion. Why not put the grades in the grade book when the student complete the assignment regardless if there is a due date or not. I only ask because I now have to post about 100 due dates 😞

You don't necessarily need to add a date. Items that aren't assigned a due date are seen as "No Date" and are grouped together for students.
The downside is that the activities wouldn't be displayed on the calendar or student to-do list. However, if you build in Modules or link to activities in an announcement or on a page, it could work for self-paced items.

Are the students still assigned to the work? If not, reassign them, and their grades will populate!
