How do I archive past classes so they are not present any more on my Published Course dashboard?

In Canvas, when you go to your "Courses" >> "All Courses" screen, do any of your courses have a filled-in yellow star to the left of the course title? If none of the stars are yellow, it would make sense that you wouldn't have an "Unfavorite" option. This is mentioned in the following Guide under the heading "Move Course Cards":
If you've never "favorited" (marking a course with a yellow star) a course before, then per this Guide, Canvas will display up to 20 course cards on your Dashboard (see the info in the light-blue box at the top of one of these Guides):
Once you "favorite" at least one course, then that is the only course that will show up on your Dashboard. Of course, you can "favorite" more than one course on your "All Courses" screen, and those courses would then appear on your Dashboard.

Very easy.
You will still be able to access the old courses, by click on "Courses" in your Global Navigation Bar. Then click on "All Courses" and look for your "Past Enrollments."

I'm a little late to this, and I'm not sure if this answers your question, technically speaking. But Instructure introduced a brand new solution, Canvas Archiving, that allows institutions to back up their courses, reduce clutter, and secure sensitive student data. The content can easily be accessed and retrieved at any time. Thanks.
