I am studying Canvas cloud assignment and this question just occurs to me.
When student click submit in could assignment, is there a file copy to Canvas? What if the student make change on their Google drive file after they submit? Will the submission change either?

When a student submits a Google Doc to Canvas, I believe Canvas makes a "snapshot" of the file, essentially like a PDF. If the student then makes a change to the original Google Doc, that change will not show up on the version submitted to Canvas. The student would have to resubmit the updated version.
If you go to your Google Drive and find the Canvas Assignments folder, however, you may be able to find the student document and see the changes there.
