Can you make it so that I can color code (as an end user) different items in a Module to differentiate content from assignments? I've read the other suggestions for using emoji's to distinguish different types of content, but I want to be able to highlight with colors.

There have been many requests for this functionality in the past, and our Product Team declined because there isn't a great way to solve for this request that would be inclusive to all learners. Accessibility is the priority, and relying solely on color to differentiate types of assignments (or priority of assignments) would exclude some learners.
Color coding items in modules sounds look an interesting idea.

There are other colors in Canvas allowed. Color pictures. Color font. Color highlighting, table border color, table background color, to name a few. I literally can change the colors of my text is this reply. As long as there is accessibility text to go along with color provided, it does not seem to harm anyone. I would like to have different module colors. They would have appropriate text describing them, for the majority of students and instructors who can use color, I'm not sure who is really being harmed. I have green/red color blindness, I get it.
