Our school has a grading scheme called "Continuum" - where teachers give a grade of AE (Approaching Expectations), ME (Meets Expectations), or EE (Exceeds Expectations). (See Continuum grading scheme.png)
When I opened Speed Grader for an assignment, I'm not able to choose one of the grades (AE, ME, EE) for the grade - I can only enter text. (See SpeedGrader - enter grade.png)
But, if I go to Grades, I can select a grade from a drop down menu. (See Grades - enter grade.png)
Is this typical behavior?
Based on your screenshots, it looks like "Continuum" is actually using customized Gradebook Status settings (see How do I manage gradebook statuses in an account ), not a grading scheme. Normally, the "status" settings are for indicating that a submission is missing, late, or excused. You can set the status in the grade detail panel, but not in Speedgrader.

I checked our Gradebook Status setting, and we don't have any set up. (See Account Grading Settings - Status.png)
I checked the grading schemes, and it is there. (See Manage All Grading Schemes.png)
For assignments, we want teachers to be able to grade on the continuum - AE, ME, EE - in both Speedgrader and in the Grades view.

The "Excused" option is what makes me suspect that you are looking at a status rather than a grading scheme, but I'm not seeing a pull-down menu like what you're showing for either a grading scheme or a status.
What do you see if you open the grade detail panel for the grade, by clicking the right arrow in the grade book cell, like this? -
In the Grades window, I can see the drop down menu for the continuum grading (see Grades - Drop down menu for continuum grading.png).
In the Grade detail panel, I don't see a drop down menu for continuum grading (see Grade detail panel - no drop down menu.png). Teachers could enter any text. If the enter something beyond the continuum grading, there is an error message (see Grade detail panel - grade entered error message.png).
In the SpeedGrader window, there is no drop down menu for continuum grading (see SpeedGrader - no drop down menu.png).
Ideally, I'd like for all grading views to see the drop down menu so teachers can enter grades.

I was eventually able to duplicate the pulldown menu with an appropriate grading scheme set. It was surprising that "Excused" appeared in the pulldown even though it is not part of the grading scheme, so that's what threw me. Sorry for the confusion!
However, I did not see a way to enable the same pulldown menu in Speedgrader. It's only available in the Gradebook view, and I don't see any settings to change that anywhere.
