I think there might be a simple fix to this...depending on how your questions are formed. For example, when building a matching question, you can see that I put the colors on the left side, and then I put the long answers on the right side.

The result from a student perspective looks like this:

In your own quiz, if you have short answers (on the left) and longer choices (on the right), have you considered flipping those around? The result would instead look something like this:

I'm not sure what the length of your matching pairs are, but you might want to consider swapping things around if that is possible. I think you and your students will have a better experience where text isn't running off the side of the screen as you describe.
