I note @NicholeDizon has provided you some information about the steps you could follow.
As another option, if you have admin access and someone who can assist you, there is an option to create, from a csv file and upload, the assessment shells as you need them.
As an example, I have worked in an organisation where we were able to set up a system that all the assessments by curriculum area were listed in the file and our data integration specialist uploaded the information into Canvas to the nominated Blueprint. Then each blueprint had the correct assessment as a 'shell', using the naming convention and could also be linked to the relevant rubric (also set up in a similar way).
We also grouped them into Summative Assessments, but you may not need that.
Our CSV file had the following headers:

Something a bit different and it worked pretty well for us.
