I would like to be able to export my Canvas course with modules into a PDF or something that can be kept as a record of what is in each module, with all content conserved. Is there an easy way to do this? Thank you!

Hi @Ron_Bowman
If the ePub feature option has been enabled in your Canvas instance by the admin, you can turn on the ePub Downloading feature option in the course and download the contents as an ePub file. See https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-view-course-content-offline-as-an-ePub-...

the only way I know of is to share it to commons (create a common cartridge) The information would then have to be loaded into a canvas course to pull it out. I do not think the information stored in it is accessible (like a zip file). Edit - I have not used common cartridges in a while, so I just tried it out. I stand corrected - you do get a zip file when you download the cartridge and it is a zip file. I can see pdf files, but I did not try a module that contained quizzes or assignments, so I do not know exactly what information you will be able to view.
Here are the instructions for how to share a resource to commons
