External Apps - Practical Assessment/Coaching Tool

I'm curious what other institutions are doing for assessment of practical components in their course. Our students spend a lot of time with hands-on work, such as in a simulated environment, and our instructors are responsible for coaching them and also writing formal assements/evaluations of their practical experiences.
Today we mostly do this using SpeedGrader to input freedback via rubrics on a pass/fail assignment, but we're looking into how we might do this in a better way and creating a better coaching experience for our students as well. Prior to Canvas we used word documents which is also what I have worked with in the past when administrating nursing students (think clinical/practicum evaluations).
How does your institution meet this need if you have this need? Any favorite external apps/tools?
