It depends on how your gradebook is setup. Are you using weighted assignment groups or just the total of all assignment points is their total grade? If using weighted assignment groups, you may need to give the student extra points on a particular assignment or quiz to adjust the total. If using just regular assignments for total points, you could consider creating an extra credit assignment, assign it to this one student only, and give them extra points there. That could work also if you are using weighted assignment groups as well if you don't want to adjust any previously graded assignments. Here is the Canvas guide:

However, if you don't want to adjust their current assignment scores or create an extra credit assignment for them, you can also enable the override total grade feature. This technically will apply to everyone and you will create a new column next to the total column. However, you only need to increase a single student's grade and the rest would still count as their totals. Some schools don't have this feature enabled, and you would need to speak with the school if these advanced options in the gradebook don't have it within your course. Here is the Canvas guide:
