There are two places within your "Notifications" screen that you should double-check. One is related to your overall notifications within Canvas, the other is related to individual course notifications.
Also, within Canvas click click on the "Account" button on the far left-hand global navigation menu, and then select "Settings". On the right side of that screen, you will see a "Ways to Contact" heading with one or more e-mail addresses listed for your account. Do any of the e-mail addresses displayed there have a red/orange "!" icon showing next to it? If so, that might be the issue that you are not receiving e-mail notifications. You can see an example of what this icon looks like by looking at the screenshot under the heading "Edit Settings" on this Guide: How do I change the settings in my user account?. If you have that icon for your e-mail address, I believe you can click on that icon to read more information about it.
