Whenever I try to submit a google doc in Canvas, it is automatically changed to a .docx file. How do I fix this?

There is nothing to fix, this is by design. It's converted to a .docx file to preserve it so it remains how it was when submitted, and to allow the instructor to use mark up tools in speedgrader for grading.
