New to using Canvas and have switched from D2L. Previously, I was able to grade only some of my students' assignments at a time, save their score (but not release it to them yet), and then finish my grading on another day. Then, I would be able to release all the grades and feedback at the same time. I teach English, so sometimes grading essays can take days, and this feature was very useful to ensure all my students were getting feedback at exactly the same time.
In the last month of using Canvas, I have not been able to see this feature or something similar. Is it possible to grade work on Canvas but not have it immediately returned to the student?

Yes, you can use grade posting policies for this. You can set these up for the entire course or just for a specific assignment. I'll provide you with links for both options...as well as a few other helpful Guides:
