How do I create a Question and Answer style document where students may post unique responses?

Could you create a Classic Quiz or a New Quiz and use the essay type questions to allow your students to type in their responses in a text box which you would then review later on?  Here are a couple Guides that explain how to create essay questions within Classic and New Quizzes.
