I'm wondering if this would be a better question to ask folks at the Clark County School District.  You've posted your question here in the global Canvas Community forums.  People from all over the world come here to ask questions about Canvas.  But, we wouldn't be able to answer specific questions about finding the course scope, goals, and/or any other information/guidelines that you are looking for.  Do you have any Instructional Designers or people in a Curriculum department that might be able to assist you at CCSD?  That's where I would begin.  Hopefully you'll be able to connect with someone at CCSD soon to discuss the items you're looking for.  Good luck to you!
