Importing from other LMS. Our school is converting from Elearning to Canvas.

Can multiple choice quizzes in Elearning be imported into Canvas? Or do I need to cut and paste line by line?

Full disclosure, I've never heard of ELearning and have never used it, so I wouldn't be able to answer your question as it relates to your quiz questions.  However, these are the Guides that are available for importing content from different LMSs.  Maybe if you are somehow able to export quizzes from your LMS into Canvas, one of these might be helpful:
