I am working as a Canvas LMS representative at Korea University. My question is, when I disable the main menu of the LMS, is it possible to make it invisible to professors as it is invisible to students? And if the professor activates it again in the Navigation menu, can it be made visible?

When customizing the course navigation, students will never see he hidden items. Teachers will see the hidden items that are built-in Canvas areas (like quizzes, assignments, etc), but they will not see hidden external tools (like a book publisher). In general, teachers would always be able to go into course settings -> navigation on their own and customize the visibility and order of the menu items to fit their course.

Is there no way hide the Quiz or Assignment menu to teacher? (Too many menu make teachers confuse..)

Without using some custom css/javascript, I don't think there is a way to hide those menus from teachers. Even if using modules for organization of content for students, teachers may want to go to the assignments page to change due dates in bulk or go to the quizzes page to view question banks (as examples). There are also a ton of Canvas instructor guide pages that reference those areas, so I feel like ti would cause more of an issue if they were hidden than what you'll have from the extra menus being visible.
