Hello,
I teach multiple classes and would like the ability to post announcements to multiple (or all) at classes once. These classes are not subsections but are different courses altogether, so the "post to sections" line is not an option.
Can we add a dropdown on the announcement creation page that allows us to identify to which classes we want the announcement to be posted? Or can we add an option to the homepage that allows announcements to be made with the option for multiple classes?

This has been possible for a long time. Using Qwerkly announcements. Go into course settings, navigation tab, to add "qwerkly" to any course site. Using that to create an announcement allows you to select any number of course sites to post it to.
Another option would be to post announcement to any one course and then "copy" announcement to any other course site. Though have to do that multiple times, for one course at a time.

Qwerkly isn't anything I'm familiar with that is native to Canvas. In doing a quick Google search, the only thing I found with the same name was at this website: Qwerkly | West Michigan Web Development. I have no idea if what @lshulman describes can integrate in some way with Canvas...and if there would be a cost to this integration. @lshulman may have been assuming that Qwerkly was available to everyone within Canvas (no matter which school was using Canvas as their LMS), but that is not necessarily the case.

It is actually called "Qwickly".
I found it in course settings --> navigation. It is a tool that provides several features when enabled in the course menu. Attendance feature is one such tool.
Haven't used it in awhile for announcement/emails to multiple courses at once.
It may be a tool that the institution subscribes to so may not be available for everyone.

The "Qwickly Course Tools" navigation button that you have is not native to Canvas, and not everyone would have access to this.

So, I'm assuming this is a third-party paid add-on that integrates somehow with Canvas.
I agree that this would be a nice function. I will also share that the workaround we currently recommend at our institution is to use the "Copy to" function. The trick is to make sure that you use a "delay posting" option, even if it's only delayed by like 5 minutes to make sure that the "posting" time is after the copy. We use this pretty regularly to copy an announcement quickly and easily into multiple courses.
