Students are seeing assignments that have not yet been graded as 0's. Why don't they show up for students with the paper icon that is in instructor's gradebooks? It would reduce so much panic from students if they saw something other than a 0 on their end! If this is an error due to my institution's setup, please let me know so that I can go and cry to them. If it is something that is due to a configuration on your part, please consider creating a method to denote to students that their assignment has not yet been graded.
Thank you!

I like the idea of creating status icons for the gradebook. Both the instructors and the students would be in the know when something is pending grading. I think this is one of these ideas that need to garner some major traction and get upvoted before Canvas even considers this...
All of these would show either in the gradebook for instructors or in the grades area for students. This would create transparency with grading for both parties.
I would look at the date the assignment was turned in versus the date it was due, and the settings for missing work. Canvas has an option to assign a 0 (or some other grade) to any assignments that are missing, after the due date has passed. Let's assume that you (or your district) has that option turned on. It is in the Gradebook settings, by the way.
Assignment A is due on Monday at 11:59 PM. On Tuesday, Canvas assigns a 0 to anyone who has not turned it in.
A student turns in the assignment on Tuesday afternoon. Hypothetically, Canvas should remove the 0 and mark it as late. However, there is a flaw in the Canvas system. Once a 0 has been assigned due to the missing work setting, that 0 will remain EVEN after the student has submitted late work. This is really annoying when you have it set up to Sync with your SIS nightly. Issues with the Missing flag have been reported for several years at least now.
Three ways to fix this. Go in and manually remove 0's from anyone who has turned it in is one way, the second is to remove the setting to automatically apply a grade for missing work. The latter will prevent this from happening, but it you would still need to manually fix any 0's applied before turning off the setting. Grading the work will also remove it, obviously, as the third fix.
Yes. My institution does utilize the setting to turn assignments into 0's if they are missing. The issue is with assignments that have been turned in but are waiting to be graded. Manually removing all 0's would be fine in a traditional class of 25 students, but we have some sections with 60 students upwards to 300. I am somewhat comforted to know that this isn't an issue only I am experiencing!
With those numbers, I understand your hesitation at manually correcting. I've just taken to letting students know that if they turn it in late, it may show a 0 even after turning it.

I like this idea. You might check the Canvas Ideas and Themes page to see if something like this is already submitted, or even better, part of a theme that is under review. If not, consider submitting this as an idea.

I made the suggestion as you recommended @UHD_AdminNickM .
