Online Form as assignment submission capability?

We currently utilize a Microsoft form to simulate an online job application for our students.  I would like to be able to replicate this experience within Canvas, but can't determine whether there is the capability to do so.  I believe that I could modify the assignment and create a quiz that would ask the students to provide the same content.  However, I think we would have issues with this option because many of the questions on the mock job application form are optional, and I don't believe that I could re-create that using the quiz feature.  I also think there could be a way for students to submit the verification they receive when the application is completed via web submission, but staff would not be able to review the responses using Canvas.  Is there any sort of work around that would allow me to build the interactive form directly into Canvas?  Thank you!

One way to build this experience in Canvas could be to use the Graded Survey in Classic Quizzes.  (It could be done in an Ungraded Survey,  but then it would not be available in SpeedGrader. The results would have to be downloaded in a CSV file.) Since it is a graded survey, you can either set the survey to award a certain number of points as soon as the survey is submitted, or your can set the survey to 0 points if you do not wish to assign a grade for this and it should not affect the course grade at all.

Although not as interactive as a quiz or form, you can upload a PDF as "Student Annotation" submission type. This allows students to use built-in annotation tools to directly annotate and submit the PDF.
