Hi @SherylTucker and welcome to the Instructure family. Here is a LINK to the Instructor Guides for Canvas. Both Quizzes and New Quizzes are covered here and you can find step by step instructions for creating and assigning quizzes. I hope this helps you out.

In addition to the link that you received from @knoxd, there are two video tutorials that you might want to look through. One is geared towards current Classic Quizzes, and the other is geared towards New Quizzes.
