It is not possible for you to remove a student's submission from an assignment once it has been submitted. Students only see the most recent submission for a given assignment. Instructors, on the other hand, have full access to all submissions...which are date and time stamped. See the section called "Evaluate Multiple Submissions" about mid-way down this Guide: How do I view the details of a submission for a student in SpeedGrader?.

I find this solution to be a real problem. What if a student mistakenly submits to the wrong assignment? I want to be able to just nix that attempt completely. Easier for the student and faculty, all around.

I searched the Feature Ideas portion of the Community website, and I found the following for you:
Delete submissions by students
If you feel that this Feature Idea aligns with something you'd like to see implemented in Canvas, you might want to consider giving it a star rating [(1) How do idea conversations work in the Instructure ... - Instructure Community (canvaslms.com)] and also leaving a comment at the bottom of the Feature Idea page letting Instructure know why this would be important to you in Canvas. If you can provide real-world examples...all the better.
