I would like to copy rubrics in my course and save as pdf's so students can print them.  Is there a way to do that other than my recreating the rubric in word?

That is a great idea, and one that would be so useful for improving student learning, but it is not currently available in Canvas.

You could create a new Idea Conversation for this functionality in this community.

My review of Idea Conversations did find an idea you may wish to support at Rubric Export.

You might consider using a screenshot of the rubric. It will be a jpeg image and look similar to a pdf. Retitle it the name of your rubric.

I did not think of this until now - a little slow on the uptake.  Of course this solution will apply to rubrics going forward.

I would use the canvancement by james jones(he has lots of good ones: this page lists them (note some links are now broken): https://community.canvaslms.com/t5/Higher-Ed-Users/Canvancements-Canvas-Enhancements/ba-p/246997#U24...  His actual page is: https://github.com/jamesjonesmath/canvancement ).  

One of his canvancements is import rubric from a spreadsheet.  I have not used it, but I have seen it work, and once it is installed it is easy to do.

This may or may not help you, but it is a possibility for going forward.  You can save the rubric as a pdf directly from excel.  If you want the gridlines to show you have to set that up in the custom margins page.
