Thanks for posting this in the global Canvas community!
As an admin, you can edit a users email two ways.
- The first option would be to manually edit it through the UI. HERE is a guide on how to accomplish this as an admin.
- The second way to edit the students email address in Canvas would be done via SIS import. You would run a users.csv as a SIS import and update the email address for the individual student. Keep in mind that if the incorrect email address is also being used for their primary login method, you might also need to update this with a logins.csv.

If you are unable to edit this information through the UI or with a SIS import, you might be missing the appropriate admin permissions. This would typically be done by an account admin at your institution/school.
