How do I see all of the attempted assignments a student has submitted?

This kind of depends on what kind of assignment this is.

If this is a quiz, you should be able to follow this guide:

If this is for another kind of assignment, like file submissions, there should actually be a dropdown menu in speedgrader. This guide should have more information on this:
