When I add people to my course, I have the option to add a user with the role of Supervisor (instead of student or teacher, etc.) What does this allow or limit? I can't find it in any of the documentation.

The reason you cannot find this in our documentation is because it is a custom role created your Canvas Admin/support department.
I see you still have student and teacher available; but if you are curious enough, you could ask your Canvas folks what this role was created for.
