In the student role I can understand that. I can only see two weeks prior and two week into the future, up to seven events at a time.
Student View:

Looking at the course from a more administrative role (Teacher) you only see the present and future Coming Up events about two weeks out.
Teacher View:

It would be nice if I could customize the to-do list and Coming Up list, but at this time, I think I understand how Canvas displays this information. This course is not a teaching course, but a more employee events and documentation repository.
Thanks Jeff for your knowledge. I'm going to write up a feature request to ask for the ability to modify the to-do list view and Coming Up view for a course.
