How do I unpublish a course when the course has "graded student submissions"?

You can't unpublish a course with submission. If you need to prevent students from submitting assessments, you can set an end date for the course or conclude it. However, students can still view the course and it will appear on the "Courses" page under Past Enrolments.
In order to hide the contents, you will need to unpublish them from the "Modules" page, or hide the menu from "Navigation"

@jerry_nguyen is correct. You cannot unpublish the course after certain things have happened in your course. These are outlined in the light blue box at the top of this Guide:
Check out the last bullet point under the "Notes" section as well as the very last paragraph under the heading "Unpublish Course" at the bottom of the page.

Something else you can do is set a course section expiration date, and check off "restrict students from viewing course". That will prevent any student's under that course section from being able to view the course, concluded or not, even when unpublished.

Actually I just remembered that if you "unfavorite" your course on the dashboard, it moves it out of your dashboard! Find the box for your course. There are 3 vertical dots on the top right. Click there. One of the tabs says "move." At the bottom of that window there's a star, and the program asks you if you want to unfavorite the course. Then if you want to see it again, you have to go to the "Courses" item in the extreme left menu on the dashboard.
