I agree with comments from @stewartk1. If you are using an iPhone, for example, you can also use the volume buttons on the side of your phone to take a photo instead of using the white button displayed on the phone itself. That's one possible way to get the photo to be right-side-up. If that still doesn't work, then open up the photo on your computer using a program like Windows Paint (or whatever the equivalent would be on a Mac). You may need to rotate the photo in that program. Then, save the photo. It should upload fine into Canvas for you.
Were the photos taken on a phone turned sideways? I haven't run into this problem in Canvas specifically, but I have seen this happen in other software and in that case the issue stemmed from the way the image data is created/read on the phone. As I recall (it was quite a while ago), I had to rotate the image and resave it before uploading it for the software to display in the orientation I wanted.
