I want to set all grades for a particular assignment to missing and be a zero. However, I do not want to be the case for all assignments in the grade book. I know there is a setting for making that the case in the whole grade book but I do not want that. Is that possible?

I think the Default Grade feature may be what you are looking for. It allows you to quickly assign a grade to all students for one assignment at a time.
