Is there a way to see old versions of assignments and discussions (similar to how we can see page history with any Canvas page)?
This would help with a variety of issues and would be incredibly helpful!

There is not a history of assignments or discussions.
The only way it can be done is by logging into your institution's "beta" (or "test") environment before the next refresh of data.
How do I access the Canvas beta environment as an admin?
However, what is in in "beta" is not every saved change and only the version of the assignment or discussion that was in the course when it was refreshed.
