When you delete an assignment is it gone or does it go into the trash somewhere? If so, where can I fnd it?

There is an "undelete" function in Canvas which lets you restore a lot of things that have been deleted, including most assignments.  See https://community.canvaslms.com/t5/Canvas-Admin-Blog/Undelete/ba-p/270560
