For a firearms training course, I would like the students, during registration, to provide information about their weapon. I.E: make model, serial number, and caliber.

What would be the preferred method?

I would recommend that you use the Quizzes feature and create an ungraded survey. This will allow students to provide that information without there being a right/wrong answer. You could also make it a graded survey if you want students to get participation points for completing it.
