How do I make the final grade reflect total points instead of percentages? For example, students need 100 points total to receive an "S" grade.

Hi @cmccann1
You can simply toggle the display setting for the "Total" grade column to be "Display as points" or "Display as percentage":
However, when you display as a letter grade, or "pass/fail", "S/U", etc., what you are doing is using a "Grading Scheme" https://community.canvaslms.com/t5/Canvas-Basics-Guide/What-are-grading-schemes/ta-p/41
Grading schemes are always based on percentages (points awarded/points possible), because otherwise you would need to have a new definition of what constituted a grade of A, B, C, or S, etc. for every possible number of points.
