The "Test Student" that you see in your Gradebook is because you most likely viewed your course via the Student View:
How do I view a course as a test student using Student View?
As soon as you view the course via the Student View, Canvas puts "Test Student" into your Gradebook. You should be able to easily remove "Test Student" from your course, though. To do this in your course, click on the "Settings" course navigation menu on the left side of your screen. Then, click on the "Sections" tab. Then, click on the name of your section that has students in it. You should see a list of students including, "Student, Test". Try hovering over "Student, Test" so that it is highlighted. Do you see a red and white circular "x" icon to the right of "Student, Test"? If so, click on this icon to remove it. When you go back to your Gradebook, "Test Student" should be removed. Just know that the next time you view your course using the Student View, the "Test Student" will re-appear in your Gradebook, and you'll have to go through the steps I've outlined to remove it again.
