Without changing any of my settings, I recently started getting notifications that I have a new message in Inbox even though I was the one who sent the message. The student has not had time to respond and no response is posted yet. It happens within less than a minute of sending the message.

There's a notification setting for "Conversations Created by Me". Can you check whether those are enabled?
Here's mine in FFT. It's very similar in my institution's account (but with an extra column):
Notice that notification settings may be different for each course, and so you may want to look at the dropdown on the top of this page if it only happens to some classes.
And about you not changing it, it could be that some admin in your institution changed it globally (intentionally or by mistake).

@Gabriel33, I could be wrong but, while some notification triggers/actions can be customized for each course, I do not believe it is possible to customize the triggers/actions that fall under "Conversations" so that they are difference for each course.
