We have been using free Canvas and are now subscribers. I used the default template and don't see any options to choose a font, nor do I see options at the course-level. Is the default font the same between the two platforms? (I can't see a difference, but my colleagues do.) And if so, can admin change the font for the instance, or instructors set the font for their courses? (besides the elementary platform being different)

As far as I know, the "regular" (not elementary) version of Canvas has used Lato as it's default font for years. This should be the same between free-for-teacher and a paid Instructure-hosted instance of Canvas. If you previously had an older open-source Canvas or something heavily customized through CSS it's possible the default font was different, but the Canvas font isn't something that is an out-of-the-box selection to customize.
