I am a newbie with Canvas so this is an elementary question. If I want to give my quizzes/tests as paper/pencil in class, how can I enter that grade in the Canvas gradebook? I have searched for an answer in the guides but haven't found anything for an answer. Thanks!

@rose_henness , welcome to Canvas! Any graded assignment that you create will populate the Gradebook with a column. In your specific case, you want to give students a quiz on paper. I would do that by creating an assignment called "In Class Quiz" (or as detailed a name and description as you'd like to include), and set it to be of the "On Paper" submission type.
This Canvas Guide explains that in greater detail: How do I add details to an assignment? In the section "Select Submission Type," the On Paper type is described as follows:
On Paper is when you want students to submit an assignment to you but not through Canvas. This assignment type applies to traditional face-to-face courses or hybrid courses when you want the assignment turned in during class, but you still want to create a column in the Canvas Gradebook for grading purposes.
So after you've collected the paper quizzes and have graded them, you can click on the Grades tab to enter your grades into the Gradebook--or you can use the SpeedGrader to navigate to each student and enter the grades that way.

You'd want to create a normal Assignment in your course (name it anything you want), and then when you are selecting the different settings for the assignment, there will be a dropdown list for "Submission Type". Go ahead and choose "On Paper" from this list, and then you'll be able to have a column for the quiz/test in your Gradebook.

Along with what others have provided in regards to setting up an assignment for the paper/pencil assignments, here is the actual guide on how to manually enter the grades into the gradebook - How do I enter and edit scores in the Gradebook?
I'm not clear on where you are trying to add the grades--on the Grades page or in the SpeedGrader for that assignment.
If it's the Grades page (gradebook), you should be able to click into the cells in that assignment column for each student and enter a score. If it's the SpeedGrader, you should be able to enter the grade in the provided box.
If these locations aren't accepting entry of values, the first thing to check is the assignment settings, to make sure you don't have "Display grade as" set to Not Graded.
When you say it won't let you enter grades, do you mean there isn't a spot to do so, you get an error message, or something else?

Thank you for the question. I figured it out. My next question is that I added the grade and it averaged it wrong. two grades 100 and an 85 and it the end it said 185%. How do I changed that?
