That's an interesting idea, @KaelynB. It sounds like a way to meet your interest is to add a timer interface to the Moderate page, perhaps made visible when the instructor selects the In Progress link for a particular student's attempt.
The best way to make this happen is to submit an idea. The process for doing this is described on the page How do Ideas and Themes work in the Instructure Community? Creating an idea does not provide an immediate solution to the problem you described, though it is a solution.
