Compliance: downloading student evidence throughout a course

At CEDP we are breaking up the competency task based on when content is delivered, the VET team were concerned about the extraction of these on the platform. 

A school of ours separated the task as we intend too, however they also asked students to paste all their answers into one document...something we want to avoid...double handling.

For our compliance purposes from a CEDP perspective for Validation, we need to be able to select random students and look through their work samples...this is they had students submit it as a separate document.

Is there a better way than what has been described above or Can Canvas automatically create folders and extract their reponses (questions and structured activities) into sub-folders (Task 1, 2, etc)?

When downloading student submissions, Canvas will put submitted files that belong to each assessment in separated folders (and courses). Thus you will need to split activities into multiple assessments as you've intended and ask students to submit their works accordingly rather than combining them into one. 

A submission to an assessment is basically a file thus there is no way for Canvas to extract them into folders (except as above)
